Rooibos Rocks Chai Pumpkin Pie

Pumpkin Pie meets Rooibos Rocks Chai tea in this delicious recipe that uses fresh and not canned pumpkin.

INGREDIENTS

Pastry:

Pastry for Single-Crust Pie: or if you’re short on time use a ready made pie crust.

  • 1 ⅓ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup shortening
  • 3 ½ tablespoons cold water

Pumpkin Pie Filling:

  • 2 cups mashed, cooked pumpkin
  • 1 (12 fluid ounce) can evaporated milk
  • 2 Rooibos Rocks Chai tea bags
  • 2 eggs, beaten
  • 1 cup packed brown sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon salt

METHOD

Preheat oven to 400 degrees F (200 degrees C).

Pastry:

  1. Prepare pie crust by mixing together the flour and salt. Cut shortening into flour; add cold water 1 tablespoon at a time (you may need 3 - 4 tablespoons) Mix dough and repeat until dough is moist enough to hold together.
  2. With lightly floured, hands shape dough into a ball. On a lightly floured board roll dough out to about 1/8 inch thickness. With a sharp knife, cut dough 1 1/2 inch larger than the 8- to 9-inch pie pan. Gently roll the dough around the rolling pin and transfer into the pie pan. Unroll, easing dough into the bottom of the pie pan. Trim any overhanging edges.

Pumpkin Pie Filling:

  1. Use 1 1/2 pounds of skin-on, raw pumpkin to yield 2 cups of mashed pumpkin.
  2. Halve pumpkin peel and scoop out seeds and stringy portions. Cut pumpkin into chunks.
  3. Add 1 tablespoon of olive oil and 1 t spoon of Cinnamon. Mix and coat the pumpkin. 
  4. Spread onto a baking sheet and cook in a pre-heated oven for 45 mins.
  5. Remove when cooked. Allow to cool.
  6. Open can of milk and pour into an heatproof bowl. Heat on high in the microwave (or stovetop) for 2 mins.
  7. Add 2 Rooibos Rocks Chai tea bags, stir and leave to infuse for 5 - 10 mins. Remove tea bags.
  8. In a large bowl, beat pumpkin with the cooled Rooibos infused evaporated milk, eggs, brown sugar, cinnamon, ginger, nutmeg and salt with an electric mixer or immersion blender. Mix well and pour into a prepared crust.
  9. Bake for 40 minutes or until a knife inserted 1 inch from the edge comes out clean.
